Access the terrace through the cellars of the château and welcome to Restaurant Prosper, our gourmet address in Saint Aubin in the Côte de Beaune. The starred chef Edouard Mignot offers you his authentic and refined cuisine to accompany the wines of the Maison Prosper Maufoux. Come and enjoy a complete wine tourism experience in the golden triangle between Meursault, Puligny-Montrachet and Chassagne-Montrachet.

During a break on the 'Route des Grands Crus' or a stay in a charming village in the heart of the vineyard, we promise you a charming culinary experience.

The sincerity and the terroir approach of the chefs' cooking match the philosophy instilled by the Famille Piffaut in the Maison Prosper Maufoux, in the elaboration of the wines from its prestigious Burgundy appellations. The Chef excels alongside his partner, the Pastry Chef Émilie Rey. Already established in the nearby village of Chassagne-Montrachet, it was natural to entrust this duo with the keys.

Prosper's cuisine
SINCERITY AND TERROIR APPROACH

At Prosper Restaurant, everything is home-made, with the desire to favour supplies from local craftsmen and producers. You will find a menu composed of great classics reinterpreted from Burgundy cuisine as well as simple dishes that will sublimate the purity and delicacy of the wines of the Maison Prosper Maufoux. The menu follows the seasons and is in line with the environment conscious approach that we advocate in the vineyard and in the cellar to create our wines.

Prosper's team

Edouard Mignot, a starred chef, was inspired by his family's cooking as a child. The work, the precision and the love of the product that his cuisine radiates today are the fruit of an academic career completed by experiences with the greatest starred chefs in France.

Emilie Rey was fascinated by the world of pastry from an early age. She has been training in this creative discipline while completing her BTS in cuisine and table arts with a year in restaurant desserts. After several internships that allowed her to perfect the precision of her creations, she joined the Auberge de L'Ile in Lyon as a pastry chef. She continued her career at the Bocuse d'Or Régis Marcon's restaurant - 3 Michelin stars in Saint-Bonnet-le-Froid - where she stayed for four years. Emilie then joined Lameloise, a three-starred restaurant in Chagny, as head pastry chef with Chef Eric Pras. 

After several years of working together in the same establishments, Emilie and Edouard form a close-knit pair who share a common vision of teamwork in the kitchen, where rigour, high standards, delight and love of the products are combined.
