Restaurant Prosper among the vineyard restaurants around Beaune
Purchased by Maison Prosper Maufoux, Château de Saint-Aubin was completely renovated by the Piffaut family in 2021, and offers four guest rooms and a gourmet table in partnership with the Michelin-starred tandem, Édouard Mignot and Émilie Rey of Ed.Em restaurant in Chassagne-Montrachet.
"The aim of this opening is twofold," says Léopold Half, the Château's wine tourism manager. "Firstly, to energize the village of Saint-Aubin, located close to the Meursault-Chassagne-Montrachet-Puligny-Montrachet golden triangle, just over the hill. Then complete our offer with an all-in-one tasting, catering and hospitality package in a single location."
A short (three starters, three main courses, three desserts), locavore menu featuring revisited classics of Burgundian cuisine and "back-from-the-market" dishes favoring short distribution channels to marry with the wines of Prosper Maufoux, but not only.
What better pairing could there be than Saint-Aubin Premier Cru Clos du Château 2018 with fresh Burgundy snails, Morgan Louche farm egg, sweet garlic cream and cherry tomato drop? This bold, lightly oaky Chardonnay comes from the vineyard just outside the Château.
For a red wine pairing, let's pair a 2018 Santenay Premier Cru Les Gravières with a Burgundian-style codfish backbone garnished with old-fashioned, Costalorian buckwheat gnocchi. The pearly flesh of the fish is "powdered" by the ageing of this pinot noir with its round tannins, and the red wine sauce provides an aromatic bridge between the fish and the wine.
