The vines of the Domaine are located in the Côte de Beaune between Santenay (to the south) and Beaune (to the north), right in the heart of the illustrious Côte des Blancs.
They extend over around 30 acres and have the particularity of being exclusively planted with Chardonnay.

Château de Saint-Aubin focuses on producing great white wines of Burgundy.
Vineyard operations are managed using ecological and sustainable methods in order to guarantee the durability of the terroir and a crop of the highest quality. The oldest vines date back to 1956 and they are still hand-harvested.
